Abstract:
Diplomová práce je zaměřena na fermentované masné výrobky, zejména na změny jejich vlastností podmíněné složením a podmínkami zrání. Teoretická část byla věnována technologii výroby fermentovaných masných výrobků a surovině skladbě.
