The quality of catering establishments and arts of supply along the motorway network in the Czech Republic

Abstract:

Tato diplomová práce se zabývá úrovní kvality poskytovaných stravovacích služeb u dálniční sítě v České republice. Cílem práce je, pomocí analýzy dálničních stravovacích zařízení, navrhnout možnosti vedoucí ke zlepšení stávajícího stavu. První část práce je zaměřena na historii dopravních cest a stravování v jejich blízkosti. Dále se také zabývá vývojem dálniční sítě v Československu a České republice. Druhá část práce se věnuje průzkumu dálniční sítě. Popisuje nejvýznamnější provozovatele stravovacích služeb na českých dálnicích a věnuje se osobnímu průzkumu dálnice D5 a úseku německé dálnice A6. V poslední části práce jsou uvedeny návrhy na změny, které by vedly ke zlepšení současného stavu. Jsou zde také shrnuty poznatky vycházející z předchozích dvou částí práce. Z šetření vyplynulo, že provozovatelé čerpacích stanic začínají rozšiřovat svou nabídku stravovacích služeb a tím se stávají velkou konkurencí pro klasické provozovny stravování u dálniční sítě. Největším problémem majícím vliv na kvalitu stravovacích služeb u české dálniční sítě je vysoká koncentrace odpočívadel s nabídkou těchto služeb. Řešení spatřuji ve snížení jejich počtu, které je plně v kompetenci Ředitelství silnic a dálnic.

Abstract:

This master’s dissertation is focusing on „The quality of catering establishments and arts of supply along the motorway network in the Czech Republic“. The aim of this thesis, based on the analytical examination of the establishments, is to provide new suggestions for improving its quality and current condition. The first part of the study focuses on the history of traffic roads and surrounding catering in addition to the development of motorway network in the Czechoslovakia and the Czech Republic. The analytical part of the thesis focuses on analysis of motorway network. It describes the most significant entrepreneurs catering establishments along the Czech motorway with focus on personal study of motorway D5 and part of German motorway A6. Last part of the dissertation provides suggestions for changes, which should lead to improve actual situation. Moreover it summarizes the findings from the first two parts of the thesis. From finding of the study is obvious, that the entrepreneurs of gas stations begin to expand their catering services, which increases the competition among the entrepreneurs of catering establishments along the motorway. Finally it can be argued, the major problem influencing the quality of catering establishments along the Czech motorway network is high concentration of rest stops with catering services. Therefore, I see the solution in reduction of some of these rest stops, which are in competencies of Road and Motorway Directorate of Czech Republic.
