Product and service quality of restaurants serving Hispanic cuisine in a selected region

Abstract:

Cílem bakalářské práce je zhodnotit a analyzovat kvalitu nabídky a služeb restaurací nabízejících mexickou kuchyni. Dalším z cílů bylo porovnat nabídku pokrmů a zhodnotit, zda se jedná o pravé mexické pokrmy. K výsledkům mé bakalářské práce jsem zvolila kvalitativní metodu mystery shopping, který obsahoval důležité otázky týkající se kvality poskytovaných služeb a nabídky vybraných restauračních zařízení. K závěru práce mi pomohl rozhovor o daném tématu s majiteli nejlépe hodnocených restaurací podle výsledků mystery shoppingu. Po uskutečnění tajných návštěv vybraných podniků jsem došla k závěru, že podle všech mnou zvolených kritérií je nejautentičtější mexickou restaurací restaurace Agave. V návrhové části uvádím vlastní doporučení pro dané podniky, pro zlepšení kvality nabídky a služeb.

Abstract:

The main aim of this bachelor’s dissertation is to evaluate and analyze quality of product and service of restaurants serving Mexican cuisine in a selected region. Another aim was to compare the menu and evaluate whether it is a real Mexican dish. For the results of my bachelor's dissertation, I chose a qualitative method of mystery shopping, which included important questions regarding the quality of services provided and the offer of selected restaurant facilities. At the end of the work I was helped by an interview on the topic with the owners of the best rated restaurants according to the results of mystery shopping. After making secret visits to selected companies, I came to the conclusion that, according to all the criteria I selected, the most authentic Mexican restaurant is the Agave restaurant. In the proposal part I present my own recommendations, for the given companies, for improving the quality of the offer and services.
