Tato práce se zabývá problematikou obsahu laktózy ve fermentovaných mléčných výrobcích. Teoretická část je rozdělena na dvě velké kapitoly. První pojednává o laktóze z hlediska fyzikálně-chemických vlastností, její syntéze, metabolismu a vlivu na lidské zdraví. Thesis deals with the issue of lactose content in fermented dairy products. The theoretical part is divided into two major chapters. The first describes lactose in terms of physicochemical properties, its synthesis, metabolism and effects on human health.
