Food as the Issue of Culture - Gastronomy in the Canton of Graubünden

Abstract:

This bachelor thesis focuses on the topic of Swiss gastronomy in the German-speaking canton Graubünden located on the borders of Austria, Italy and Liechtenstein. The main topic of the thesis looks into local specialities, taking into account the typical dishes and drinks from all-around Switzerland. The theoretical part of the thesis explains the concepts of gastronomy and its rules as well as gastronomy associated with catering and gastronomic festivities. This is followed by travel tourism and hospitality along with the division of cafés and the first café in Switzerland. The theoretical part of the thesis ends with the analysis of menus. The practical part of this thesis is centred on specific specialities from all-over Switzerland, such as chocolate, cheese and national drinks. The traditional dishes from canton Graubünden are described in detail. In addition, there is an introduction to traditional and homemade alcoholic beverages such as beer and wine. This includes the listed differences between the Czech and Swiss eating habits. The final part of this thesis independently describes the cultural point of view of the five menus from the canton Graubünden, appendix attached. All chapters in the practical part of the thesis contain, in addition to theoretical knowledge, practical experience acquired through seasonal jobs and a six-month stay in Switzerland. To point out the differences between the standard German language and Swiss - German language, an attached dictionary has been compiled at the very end of the thesis.

Abstract:

Die vorliegende Arbeit beschäftigt sich rundum mit dem Kulturthema Essen - Gastronomie im Kanton Graubünden. Überwiegend wird der Fokus auf den deutschsprachigen Kanton an den Grenzen zu Österreich, Italien und Liechtenstein gelegt. Die Abschlussarbeit konzentriert sich nebenbei auf lokale Spezialitäten unter Berücksichtigung der typischen Gerichte und Getränke der ganzen Schweiz. Der theoretische Teil erklärt die Konzepte der Gastronomie und ihre Regeln. Weiterhin wird der Zusammenhang der Gastronomie mit Catering und gastronomischen Veranstaltungen beschrieben. Darauf aufbauend folgen Reisetourismus, Kulinaristik, Gastlichkeit sowie die Aufteilung der Cafés und das erste Café der Schweiz. Der theoretische Teil endet mit der Aufteilung der Speisekarten. Im praktischen Teil konzentriert sich die Arbeit auf bestimmte Spezialitäten aus der ganzen Schweiz bespielweise Schokolade, Käse und Nationalgetränke. Traditionelle Gerichte aus dem Kanton Graubünden werden hier näher beschrieben. Es gibt auch eine Einführung in traditionelle und einheimische alkoholische Getränke wie Bier oder Wein. Die Unterschiede zwischen tschechischen und schweizerischen Essgewohnheiten sind aufgeführt. Im letzten Teil der Arbeit werden aus kultureller Sicht individuell 5 Speisekarten aus dem Kanton Graubünden beschrieben, die im Anhang beigefügt sind. Alle Kapitel des praktischen Teils enthalten neben dem theoretischen Wissen auch Wissen aus der Praxis, das während der Saisonarbeit und eines sechsmonatigen Aufenthalts in der Schweiz erworben wurde. Am Ende dieser Arbeit wird eine Wortschatzlistezusammengestellt, die auf die Unterschiede zwischen Schweizer- und Hochdeutsch hinweist.
