Technology of vermouth production and its use in mixology

Abstract:

Tato diplomová práce pojednává o fortifikovaných vínech, ale především je práce zaměřena na technologii výroby vermutu a jeho možné využití k přípravě míchaných nápojů. Dále se práce zaměřuje na popsání procesu macerace bylin, a také na objasnění pojmu mixologie. V praktické části je popsán postup pro výrobu vermutů. V této části je také pojednáváno o senzorických a analytických hodnotách těchto vermutů a receptury pro výrobu míchaných nápojů, které obsahují vermut jako základní složku. Dále je v praktické části obsaženo dotazníkové šetření o chuťových preferencích respondentů ohledně výběru míchaného nápoje, který (ne)obsahuje vermut. Při vypracovávání práce bylo zjištěno, že vermut je nápoj s dávnou historií, hojně využívaný v gastronomii jako součást míchaných nápojů, avšak málo známý mezi konzumenty.

Abstract:

This master thesis is focused on fortified wines, but above all, the work is focused on the technology of vermouth production and its possible use in the preparation of mixed drinks. Furthermore, the work deals with the description of the process of maceration of herbs, as well as clarification of the concept of mixology. The practical part describes the procedure to produce vermouths. This section also discusses the sensory and analytical values of these vermouths and recipes to produce mixed drinks that contain vermouth as a basic ingredient. Furthermore, the practical part contains a questionnaire survey about the respondents' taste preferences regarding the choice of a mixed drink that (does not) contain vermouth. During the preparation of the work, it was found that vermouth is a drink with a long history, widely used in gastronomy as part of mixed drinks, but little known among consumers.
