A Sensory Elicitation as a Qualitative Method of Research in Gastronomy
Abstract:
Bakalářská práce se zaměřuje na téma senzorické elicitace jako kvalitativní metody výzkumu v gastronomii. Téma bylo zvoleno a zpracováno z důvodu osvětlení problematiky senzorické elicitace v gastronomii.V analytycké části je popsán samotný výzkum, v návrhové části je tento výzkum propojen s praxí.
Abstract:
The bachelor thesis focuses on the topic of sensory elicitation as a qualitative research method in gastronomy. The topic has been chosen and developed in order to shed light on the issue of sensory elicitation in gastronomy.The analytical part describes the research itself, the proposal part connects this research with practice.
