Factors influencing the quality of pork meat

Abstract:

Hlavními cíli této bakalářské práce bylo popsat a zjistit spotřební chování studentů vysoké školy a jejich senzorické vnímání vepřového masa. Dále pak popsat faktory ovlivňující kvalitu vepřového masa v návaznosti na jeho technologické zpracování a konečnou tepelnou úpravu. Analytická část je rozdělena na dvě hlavní části. První je dotazníková část a druhé je senzorické hodnocení vepřového masa 120 respondenty (60 respondentů od každého pohlaví), jimiž byli studenti vysoké školy bakalářských a magisterských oborů. Cílem senzorické analýzy bylo rozlišit kvalitu grilované vepřové pečeně pocházející ze dvou různých systémů ustájení (podestýlka vs roštová podlaha). Výzkumnou otázkou bylo, jaké je spotřební chování studentů vysoké školy, a zda maso z pečeně prasat ustájených na podestýlce bude dosahovat v senzorickém testu lepších výsledků než maso z pečeně prasat, která byla během výkrmu ustájena na roštech.

Abstract:

The main goals of this bachelor's thesis were to describe and determine the consumption behavior of university students and their sensory perception of pork meat. Moreover, another goal was to describe the factors influencing the quality of pork meat in connection with its technological processing and final heat treatment. The analytical part is divided into two main parts. The first is a questionnaire part and the second is a sensory evaluation of pork meat by 120 respondents (60 respondents from each gender), who were university students of bachelor's and master's fields. The aim of the sensory analysis was to differentiate the quality of grilled pork loin coming from two different housing systems (bedding vs. grid floor). The research question was what the consumption behavior of university students is and whether meat from pig loins housed on bedding will achieve better results in a sensory test than meat from pig loins housed on grid floor during fattening.
