State of art of evaluation of health risks connected with consuming of artificial sweeteners

Abstract:

Tato bakalářská práce se zabývá tématem toxicity umělých sladidel. Je zaměřena na čtyři nejvíce se vyskytující intenzivní sladidla, a to aspartam, acesulfam-K, sacharin a cyklamát. Úvod práce pojednává o definování pojmů přídatná látka, umělé sladidlo, shrnuje aktuální stav legislativy a je zde uvedena studie o příjmu umělých sladidel u studentů. Druhá část práce je zaměřena již na jednotlivá sladidla. V daných kapitolách se zabývám chemickými a fyzikálními vlastnostmi sladidel a jejich toxicitou. Klíčová slova

Abstract:

This dissertation deals with toxicity of artificial sweeteners. It has been focused on four most commonly used intensity sweeteners: aspartame, acesulfame-K, saccharin and cyclamate. The introduction of present dissertation has been aimed at defining the terms like food additives or artifical sweetener. Moreover, it summarizes current legislation and includes study on artificial sweeteners intake among students. Another part of the present dissertation has been focused on particular sweeteners. You will find description of their physical and chemical properties, including information on their toxicity, in individual chapters.
