Abstract:
Tato bakalářská práce se zabývá studiem krystalizace vody v podchlazených roztocích cukrů (30 hmot.% sacharózy a 30 hmot.% glukózy). V teoretické části jsou popsány vznik, růst a rekrystalizace krystalů ledu, vliv sacharidů a podchlazení na krystalizaci, morfologie krystalů ledu a některé experimentální metody používané při výzkumu krystalizace ledu v podchlazených vodných roztocích sacharidů. This bachelor?s thesis is focused on crystallization of water in undercooled sugar solutions (30 % w/w sucrose and 30 % w/w glucose).
