Abstract:
Bakalářská práce se zaměřuje na popis hydrofilních vitaminů (thiamin, riboflavin, niacin, kyselina pantothenová, pyridoxin, folacin, korinoidy, biotin a vitamin C) a možnosti jejich stanovení. Stanovení vitaminů je náročné, protože jsou v potravinách obsaženy ve velmi nízkých koncentracích a většinou jsou citlivé k slunečnímu záření, anebo k oxidaci. Abstract:
The thesis deals with the characterization of water-soluble vitamins (thiamine, riboflavine, niacin, pantothenic acid, pyridoxine, folate, corinoids, biotin and vitamin C) and their de-termination. Determination of vitamins in foods is quite difficult because of their low con-centrations and high sensitivity to sunlight or oxidation.
