Chemical and physical indicators of the quality of meat

Abstract:

Maso zvířat bylo a je součástí přirozené složky potravy, neboť obsahuje řadu nutričních látek, které jsou nezbytné pro správný růst a zdravý vývoj organismu. Je také důležitým zdrojem energie. Jeho spotřeba a produkce se neustále zvyšuje. Tato práce se zabývá faktory a ukazateli, které ovlivňují kvalitu a čerstvost masa. Dále jsou zde uvedeny analytické metody, kterými lze kvalitu masa ověřit.

Abstract:

Meat animals was and is part of the natural food ingredients, it contains many nutrients that are essential for proper growth and healthy development of the organism. It is also an important source of energy. Its consumption and production is increasing. This work focuses on the factors and indicators that affect the quality and freshness of meat. Analytical methods available to verify the quality of meat are presented.
