The influence of multicultural environment on eating services in a spa sector

Abstract:

Diplomová práce pojednává o vlivu multikulturního prostředí na stravovací služby v lázeňství a současném stavu a využití dietního systému a dietního stravování ve společnosti Aristokrat Group. V práci byla zhodnocena hypotéza č. 1- Multikulturní klientela je spokojená s dietním lázeňským stravováním ve společnosti Aristokrat Group. Dále byla zhodnocena hypotéza č. 2- Ohled na multikulturní klientelu vyžaduje zásah a změnu dietního lázeňského stravování. Cílem této diplomové práce je zhodnocení současného stavu stravovacích služeb v lázeňství s ohledem na kulturní diverzitu a zhodnocení stravovacích služeb ve společnosti Aristokrat Group, která se nachází v lázeňském městě Karlovy Vary. V posledních letech se orientace na cílovou skupinu klientů stále rozšiřuje, a proto se stále častěji můžeme setkat s multikulturní klientelou v českém lázeňství, které ovšem sebou přináší i často odlišné požadavky na služby včetně stravovacích odlišností a návyků. Z dotazníkového šetření mezi klienty společnosti Aristokrat Group vyplynulo, že více než polovina klientů společnosti je spokojena se stravovacími službami. Hypotéza č. 1 byla tedy potvrzena. Avšak hypotéza č. 2 byla zamítnuta. Určitě je zapotřebí inovovat a zpestřovat lázeňské dietní stravovaní ale zásadně měnit či zasahovat do dietního systému je nežádoucí. Na základě výsledků dotazníkového šetření a řízeného rozhovoru bylo v návrhové části navrženo zachování lázeňského dietního systému a rozšíření dietního lázeňského lístku s ohledem na diverzifikaci klientely, která by zajistila větší pestrost nabídky dietních jídel, což by napomohlo k větší spokojenosti multikulturní klientely ve společnosti Aristokrat Group. Dále byly navrhnuty pravidelné přednášky s nutriční terapeutkou, které by vedly ke zvýšení informovanosti klientů s dietním systémem. Dalším návrhem, který vyplynul z dotazníkového šetření, je zvětšení prostoru restaurace ve společnosti Aristokrat Group, které jsou nyní nedostačující.

Abstract:

The diploma thesis deals with the influence of a multicultural environment on the catering services in spa care and the current situation and use of the diet meals system and diet meals in the Aristokrat Group company. In the work the hypothesis no. 1 – Multicultural clientele of the Aristokrat Group company is satisfied with the offered catering services – was evaluated. Hypothesis no. 2 – Consideration of the multicultural clientele requires an intervention and change of the dietary meals in the spa catering – was evaluated as well. The purpose of this diploma thesis is to evaluate the current situation of the catering services in spa care with consideration of cultural diversity. In recent years, the orientation to the target group of clients keeps growing and so we can come across with multicultural clientele in the Czech spas more often; it often brings along different requirements for services, including eating differences and habits. A questionnaire survey among the multicultural clients of the Aristokrat Group company has shown that over one half of the clients are satisfied with the catering services. Hypothesis no. 1 was thus confirmed and hypothesis no. 2 rejected. It is certainly appropriate and necessary to make the spa dietary meals more varied but it is undesirable to intervene or change the dietary system in any significant way. Based on the results of the questionnaire survey and directed interview, the proposal part offers the option of keeping the spa dietary system and expanding the offer of spa diet menu with regard to the diverse clients, to provide for the variety of diet meals offer which would support a greater level of satisfaction of the multicultural clientele in the Aristokrat Group company. Regular lectures by a dietary therapist were proposed, to increase the knowledge of the clients with special diet. Another proposal that came out of the questionnaire survey was extending the space of the restaurant in the Aristokrat Group company, which is not adequate at the moment.
