Alimentary infections and poisoning and allergens in food

Abstract:

Tato diplomová práce se v první části zabývá alimentárními nákazami a otravami a v druhé části nejznámějšími druhy alergenů. Teoretická část obsahuje základní charakteristiku a rozdělení alimentárních nákaz a členění alergenů. V práci jsou uvedeny i otravy způsobené potravinami. Praktická část je zaměřena na výzkum mezi žáky Hotelové školy. Pomocí dotazníku se bude zjišťovat zkušenost s nákazami, otravami a alergeny v potravinách. Cílem je zmapovat situaci a následně podle výsledku žáky poučit. Výsledky konzultovat s vedoucí školní jídelny a snažit se vyřešit stravování i pro tyto žáky.

Abstract:

The first part of this thesis focuses on food infections and food poisoning, and the second part deals with the most common types of allergens. The theoretical part aims to provide the basic characteristics and classification of food infections and allergens. Food poisoning is included in this part as well. The research part of the thesis is based on the survey carried out at the Catering School in Prague 10. The students have been asked questions concerning their experience with food infections, food poisoning and allergens. The aim is to map the situation and consequently, based on the results of the study, to provide the students with adequate advice. The outcome will also be discussed with the management of the school canteen and will serve as the springboard for the improvements in the offered meals.
