Abstract:

Abstract VYBÍRALÍKOVÁ, Veronika. The Art of Fermentation in Cocktails: The Bartender’s Perspective. [Bachelor thesis] University Prague - College of International Relations and Institute of Hospitality Management and Economics, Ltd. Prague: 2024. 55 pages. This bachelor thesis aims to explore the economic aspect of fermentation used for cocktail preparation and the perception among bartenders and customers. The purpose is to investigate the multifaceted role of fermentation. The thesis is divided into the primary sections of theoretical part, analytical part, output and findings and conclusions. The theoretical part incorporates the history of fermentation, background information about alcohol and cocktails, trends in cocktails now days and the acidic environment of liquids and its safety. The analytical part contains the methods and methodology and data collection and evaluation. Three main experiments have been held: Quantitative research among bartenders and customers to gain their perception, Measuring preservation of fermented and fresh grapefruit juice by pH levels and Cost calculation of production. The methodology was selected with the intent of grasping the objectives and addressing the stated research questions: [1] How does acceptance of fermentation vary among bartenders and customers? [2] How does preservation contribute to fermentation? [3] What are the economic variables of fermented product and fresh alternative? Outputs and findings were stated with possible future recommendations. Conclusions were noted with the results implying the recognition of fermentation in the bar industry in relation to cost and sustainable, however not fully appreciated by the consumers.
