Comparison of branded restaurants of Czech breweries in the selected region

Abstract:

Cílem této bakalářské práce je porovnat tři značkové restaurace českých pivovarů v Plzni. První restauraci tohoto typu otevřel pivovar Prazdroj, který tento restaurační řetězec pojmenoval Pilsner Urquell Original Restaurant. Porovnávaná restaurace tohoto pivovaru se jmenuje Pilsner Urquell Original Restaurant U Mansfelda. Dalším pivovarem je pražský pivovar Staropramen, který založil koncept restaurací Potrefená Husa. Poslední porovnávanou restaurací je Kozlovna, patřící pivovaru Velkopopovický Kozel. Tato bakalářská práce je rozdělena do tří částí. Teoreticko-metodologická část se zaměřuje na základní pojmy spojené s touto prací. Jedná se především o historii gastronomie, pivovarnictví a franchising. V analytické části jsou restaurace porovnány z různých úhlů na základě dvou metod. První použitou metodou je Mystery Shopping, který byl proveden za účelem porovnání restaurací z hlediska kvality služeb, kvality produktů a interiéru. Druhou metodou je řízený rozhovor s manažery restaurací. Na základě těchto rozhovorů jsou porovnávané oblasti týkající se zaměstnanců restaurací, klientely restaurací, firemní kultury a franchisových smluv. Výsledkem této práce je zjištění, že jsou v restauracích detaily, které mohou manažeři restaurací s obsluhujícím personálem velice jednoduše vylepšit. Kromě těchto detailů jsou restaurace na vysoké úrovni kvality služeb i produktů. Tyto zaběhlé koncepty českých pivovarů se liší firemní kulturou, nabídkou i vzhledem interiéru. Všechny tři restaurace jsou velice oblíbené, mají velký počet stálých zákazníků a zakládají si především na špičkové kvalitě piva a vysoké úrovni gastronomie.

Abstract:

The aim of this bachelor’s dissertation is to compare three branded restaurants of Czech breweries in Pilsen. The first restaurant of this type opened the Prazdroj brewery, which named the restaurant Pilsner Urquell Original Restaurant. Compared restaurant of this brewery is the Pilsner Urquell Original Restaurant „U Mansfelda“. Another brewery is the Staropramen brewery in Prague, which founded Potrefená Husa restaurant concept. Last compared restaurant is Kozlovna, which belongs to the brewery Velkopopovický Kozel. This bachelor’s dissertation is divided to three parts. The theoretical part is focused to the basic concepts associated with this work. It is mainly about the history of gastronomy, brewing and franchising. In the analytical section restaurants are compared from different points of view by using two methods. The first used method is Mystery Shopping, which was designed to compare restaurants in terms of quality of service, product quality and interior. The second method is a controlled interview with restaurant managers. Based on these interviews, there are comparing areas for restaurant employees, restaurant clients, and corporate culture and franchise contracts. The result of this work is to find that there are details in restaurants that can be easily improved by restaurant managers with service staff. In addition to these details, there are high-quality restaurants. These concepts of Czech breweries differ in the corporate culture, offer and appearance of the interior. All this three restaurants are very popular, have a large number of regular customers and are based on top quality beer and high level of gastronomy.
