Abstract:

Diplomová práce popisuje vliv elektroaktivované vody na skladování různých druhů ovoce a zeleniny a hlavně vliv na jejich antioxidační kapacitu. Teoretická část se zabývá popisem antioxidantů a metod na určení antioxidační kapacity. Popisem použitých vzorků ovoce a zeleniny. Dále jsou zde popsány deklarované účinky elektroaktivované vody a její dostupnost. Praktická část se zabývá stanovením antioxidační aktivity metodou DPPH a stanovením polyfenolických látek ve vzorcích. Je zde také vyhodnocena analýza vzorků senzorickými metodami.

Abstract:

This thesis describes the effect of electrolyzed water on storage of different fruits and vegetables and its major influence on their antioxidant capacity. The theoretical part describes antioxidants and methods to determine antioxidant capacity. Description of the samples of fruit and vegetables. There are also described declared effects of electrolyzed water and its availability. The practical part deals with the determination of antioxidant activity using DPPH method and determination of polyphenols in the samples. There is also samples analysis evaluation using sensory methods.
