The crystallization in undercooled sucrose aqueous solution

Abstract:

Předmětem této diplomové práce bylo studium krystalizace vody v podchlazeném vodném roztoku sacharózy o vhodně zvolené koncentraci 50 hm%. Krystalizace vody v systému voda - sacharóza byla sledována za neizotermních podmínek metodou diferenční skenovací kalorimetrie. Z experimentálních dat byla určena teplota krystalizace vody, teplota skelného přechodu matrice a teplota následného tání ledu ve vzorku. Za podmínek izotermních i neizotermních byla sledována nukleace, růst krystalů vody, jejich morfologie a tání v roztoku sacharózy (50 hm%) metodou optické mikroskopie. Z naměřených dat byl určen charakter nukleace a byly stanoveny nukleační teplotní oblasti. Byla vyhodnocena rychlost růstu krystalů vody pro oblasti homogenní a heterogenní nukleace. Dále byly určeny morfologické typy krystalů vody. Ze získaných dat byly určeny rychlosti růstu jednotlivých tvarů krystalů. Byl stanoven průběh teplotní závislosti rychlosti růstu krystalů vody v roztoku a bylo stanoveno maximum této závislosti. Dále byla zjištěna závislost růstové rychlosti na stáří vzorku. Mikroskopicky bylo pozorováno tání vzniklých krystalů ledu a byla stanovena jejich teplota tání.

Abstract:

The aim of this thesis is the study of water crystallization in undercooled aqueous solution of sucrose with 50 wt% concentration. The ice crystallization in the water sucrose system was observed by differential scanning calorimetry under non isothermal conditions. Temperature of ice crystallization, glass transition temperature of the matrix and ice melting temperature were obtained from experimental data. Nucleation, crystal morphology and growth and melting of ice crystallites in sucrose solution (50 wt%) was studied by means of optical microscopy under isothermal and non isothermal conditions. The characters of homogenous and heterogenous nucleation were specified and the nucleation temperatures were obtained. The growth rate of ice crystals in sucrose solution (50 wt%) was defined for both, homogenous and heterogeneous nucleation. The crystal morphology was characterized and divided into three groups. For every group, the growth rate of ice crystals was evaluated. The temperature dependence of growth rate for ice crystals in sucrose solution (50 wt%) was determined and maximum of this dependence was obtained. The dependence of the ice crystal growth rate on solution aging was found. In addition, the melting of ice crystals in sucrose solution was studied and the temperature of melting was determined.
