Pre-fermentation treatments of wine

Abstract:

Tato bakalářská práce se zabývá různými předfermentačními úpravami vína a je zpracována formou literární rešerše. Je zaměřená jak na klasickou maceraci, tak na její novější formy, které ovlivňují výsledný profil vín. V úvodu první části jsou popsané látky, které jsou obsaženy v moštu, jejichž obsah se vlivem různých macerací mění. Tato práce je hlavně zaměřena na různé druhy macerace, jako je kryomacerace, karbonická macerace či macerace teplou flash cestou. Popisuje i macerace s obsahem různých částí révy vinné, jako jsou listy, třapiny, semena a jejich vliv na výsledné víno. Bakalářská práce se kromě maceračních technik zabývá i dalšími předfermentačními úpravami, které v praxi nejsou velmi rozšířené, a to stabulací studenou či teplou cestou, či biokontrolou.

Abstract:

The bachelor's thesis is concerned with various pre-fermentation treatments of wine and is written as literature research. It focuses on classical maceration and its newer forms, which influence the final profile of the wines. In the introduction, the substances contained in the must, which concentration are affected due to different maceration techniques, are described. This work is mainly focused on various techniques of maceration, such as cryomaceration, carbonic maceration or hot flash maceration. It also describes macerations containing various parts of the vine, such as leaves, grape stems, seeds and their effect on the resulting wine. In addition to maceration techniques, the bachelor's thesis also deals with other pre-fermentation treatments, which are not very widespread in practice, namely cold or hot stabulation or biocontrol.
