Production technology of cider-type fermented apple must
Abstract:
Bakalářská práce pojednává o zkvašeném jablečném moštu typu cider. Konkrétně se tato práce zabývá charakterizací, technologií výroby tohoto nápoje a mikrobiálními kulturami využívanými k výrobě cideru. V této práci jsou navíc popsány faktory ovlivňující organoleptické vlastnosti ciderů a možná rizika spojená s konzumací těchto nápojů.
Abstract:
This bachelor thesis treats about cider type fermented apple must. Specifically, the thesis deals with characterization, production technology of this beverage and microbial cultures used for the production of cider. Moreover, there are described factors influencing ciders organoleptic properties and possible risks connected with these beverages consumption.
