Qualitative properties of chicken ham
Abstract:
Tato práce se zabývá vlivem přídavku různých druhů hydrokoloidů na kvalitativní vlastnosti kuřecích šunek, zkoumán je i vliv fosfátu. Praktická část se věnuje výrobě dvou sad modelových vzorků kuřecích šunek s použitím různých druhů hydrokoloidů, přičemž u jedné sady byl použit fosfát, u druhé zcela eliminován. This paper deals with the effect of the addition of different types of hydrocolloids on the qualitative properties of chicken hams, the effect of phosphate is also investigated. The practical part is devoted to the production of two sets of model samples of chicken hams using different types of hydrocolloids, with phosphate used in one set and completely eliminated in the other.
