Abstract:
Tato bakalářská práce se zabývá metodami, pomocí kterých lze měřit obsah cukrů v potravinářství.Popisuje principy a postupy vybraných metod a měřidla vhodná pro tyto metody. U jednotlivých měřidel je vysvětleno, na jakém fyzikálním principu pracují. V další části jsou popsané metody měření cukernatosti aplikovány na konkrétní vzorky. This bachelor thesis deals with methods by which it is possible to measure the sugar content in the food industry.It describes principles and procedures of selected methods and gauges suitable for these methods.
