Analysis of herbal sensory active substances
Abstract:
V bakalářské práci jsou charakterizovány senzoricky aktivní látky obsažené v bylinách a metody jejich stanovení. K nejdůležitějším senzoricky aktivním látkám se řadí látky vonné (především terpenické uhlovodíky, aldehydy a ketony), chuťové látky (látky sladké, slané, kyselé, hořké a trpké) a barviva (karotenoidní, flavonoidní a chlorofylová barviva). In the thesis there are sensory active substances in herbs and methods for their determinati-on characterized. The most important sensory active substances are odorants (especialy turpentine hydrocarbons, aldehydes and ketones), taste substances (sweet, acid, bitter and astringent substances) and colorants (carotenoids, flavonoids and chlorophyllous dyes).
