Bakalářská práce bude zpracována formou literární rešerše. Popište enzym lysozym. Zaměřte se na jeho chemickou strukturu, přirozený výskyt a antimikrobní vlastnosti. Charakterizujte enzymy, včetně potravinářského hlediska. Uveďte další látky s antimikrobními vlastnostmi, popište inhibiční účinky vybraných látek na potravinářsky významné mikroorganismy. Abstract:
This work will be elaborated as a literary search. The enzyme lysozym will be described with focus on its chemical structure, natural occurrence and antimicrobial characteristics. In next parts will be characterized microorganisms which caused food spoilage with emphasis on potential pathogenic bacteria and their sensitivity to lysozym.
