Culinary heritage of the selected region

Abstract:

The diploma thesis deals with the topic of culinary heritage of the selected region. The primary objective of the thesis is to identify the traditional dishes of the Kysuce region, along with the cultural, natural and other conditions that contributed to the emergence and formation of traditional dishes. The secondary objective is to identify the attitude of the inhabitants towards traditional dishes. The thesis is divided into three parts - theoretical, analytical and design part. In the theoretical part of the thesis we use research of selected literary and internet sources that define the natural, cultural and historical conditions of the Kysuce region and other information related to the topic of the thesis. In the analytical part, a set of ten regionally traditional dishes is compiled. Through research, it is established whether these regional traditional dishes are really traditional or are just considered as such. The research further establishes how often the traditional dishes are eaten and who prepares these dishes. The analytical part uses three research methods, namely information gathering from historical documents, questionnaire survey of the inhabitants of the region and personal interviews with the commemorators of the Kysuce region. A total of 422 respondents of all ages answered the questionnaire survey. Ten commemorators aged 71-80 were invited for personal interviews. The third, proposal part focuses on suggestions and recommendations for the popularisation and promotion of traditional dishes of the Kysuce region, which would ensure the preservation of the culinary culture of the region.

Abstract:

Diplomová práca sa zaoberá témou kulinárskeho dedičstva vybraného regiónu. Primárnym cieľom diplomovej práce je identifikácia tradičných pokrmov Kysuckého regiónu, spolu s kultúrnymi, prírodnými a ďalšími podmienkami, ktoré sa podieľali na vzniku a formovaní tradičných pokrmov. Sekundárnym cieľom je identifikácia postoju obyvateľov k tradičným pokrmom. Práca je rozdelená do troch častí – teoretickej, analytickej a návrhovej časti. V teoretickej časti sa využívajú rešerše vybraných literárnych a internetových zdrojov, ktoré definujú prírodné, kultúrne a historické podmienky Kysuckého regiónu a ostatné informácie, ktoré sa týkajú témy práce. V analytickej časti je zostavený súbor desiatich regionálne tradičných pokrmov. Prostredníctvom výskumu sa zisťuje, či tieto regionálne tradičné pokrmy sú skutočne tradičné alebo sú za to len považované. Výskumom sa ďalej zisťuje ako často konzumujú tradičné pokrmy a kto im tieto pokrmy pripravuje. Analytická časť využíva tri výskumné metódy a to zber informácii z historických dokumentov, dotazníkové šetrenie obyvateľov regiónu a osobné rozhovory s pamätníkmi Kysuckého regiónu. Na dotazníkové šetrenie odpovedalo celkom 422 respondentov všetkých vekových kategórii. Na osobné rozhovory boli pozvaní desiati pamätníci vo veku od 65 do 86 rokov. Tretia, návrhová časť sa zameriava na návrhy a odporúčania na popularizáciu a propagovanie tradičných pokrmov Kysuckého regiónu, ktoré by zabezpečili udržanie kulinárskej kultúry regiónu.
