Oxidative enzymes in grape berries

Abstract:

Tato diplomová práce byla vypracována na Zahradnické fakutlě Mendelovy univerzity v Brně, na Ústavu vinohradnictví a vinařství v Lednici.Diplomová práce se zabývá enzymy produkovanými révou vinnou a kontaminujícími mikroorganismy. V literární část se zaměřuje na problematiku enzymů v bobulích, s větším zaměřením na oxidační enzymy. Experimentální část zkoumá aktivitu polyfenoloxidáz v závislosti na zralosti hroznů a k odrůdě. K pokusu bylo vybráno 8 odrůd révy vinné pocházející ze Slovácké podoblasti z obce Traplice. Výsledky jsou popsány a znázorněny v grafech.

Abstract:

This diploma thesis was created at the Faculty of Horticulture of the Mendel University in Brno, at the Institute of Viticulture and winemaking in Lednice.The diploma thesis deals with enzymes produced by vines and contaminating microorganisms. The literary part focuses on enzymes in berries, with a closer focus on oxidative enzymes. The experimental part examines the activity of polyphenoloxidases depending on the ripeness of the grapes and the variety. To the experiment were chosen 8 vine varieties originating from the Moravian Traplice sub-region. The results are described and illustrated in the graphs.
