Tato práce se zabývá vlivem kvasničních kalů na obsah biogenních aminů. Práce je rozdělená na dvě základní části. V teoretické části jsou popsané biogenní aminy, jejich vznik, klasifikace, význam, výskyt a faktory, které ovlivňují tvorbu v potravinách. This thesis deals with the influence of yeast sludge on the content of biogenic amines. The thesis is divided into two parts. The theoretical part describes biogenic amines, their origin, classification, significance, occurrence and factors that affect production in foodstuff.
