Comparison of styles of wines from Chardonnay

Abstract:

Diplomová práce zkoumá analytickou formou konečný styl vín z odrůdy Chardonnay. První kapitola pojednává o faktorech, jež ovlivňují odrůdu Chardonnay. Jedná se o původ odrůdy, rozdílnost klonů, terroir, výnosnost keře, vinifikaci, používání dřevěných sudů a chemické vyjádření aromat. U terroir jsou popsány vhodné půdy pro Chardonnay, jak vzniká mineralita ve víně, vliv expozice svahu, klimatické podmínky. Všechny tyto vlivy se liší rozdílnými oblastmi. Dále se zabývá tím, jak jsou hrozny zpracovány. Druhá kapitola zmapovává výsadbu Chardonnay po celém světě a naznačuje, jaký styl vína se v dané oblasti dá vyrobit. Další část se zaměřuje na dvě oblasti a to oblast Burgundska a Champagne, kde jsou detailněji popsány místní terroir. Záměrně byly vybrány dané lokality, protože se jedná o jednu zemi. Lokality nejsou od sebe příliš vzdálené a přitom jsou diametrálně odlišné. Posléze byla vybrána vína z daných oblastí a byl proveden rozbor vzniku vína. Řešil se sběr hroznů, fermentace, dozrávání, filtrace. Nakonec jsou u vín uvedené popisky od dvou vinných kritiků Wine Spectator a Robert Parker, kteří slovně a číselně hodnotí dané víno. Každá z daných oblastí se liší vlastním terroir a také odlišnou filozofií ve vinifikaci. Podoblast Côte de Beune hojně využívá při fermentaci a dozrávání dřevěné sudy, jež dodávají vínu plnost. Na rozdíl od podoblasti Chablis, kde nerezové tanky jsou na denním pořádku a dřevěné sudy jsou používané s lehkostí a to dává vínům svěžest. Zato v Champagne převládá kombinace nerezových tanků a dřevěných sudů, doplněná o druhotné kvašení v láhvi. Právě to činí vína z Champagne zcela odlišnými.

Abstract:

The thesis examines the analytical form of final style of wines from Chardonnay. The first chapter discusses the factors that affect cultivation of Chardonnay. There was discribed the origin of the variety, diversity clones, terroir, profitability shrubs, vinification, the use of wooden barrels and chemical expression of aromas. In terroir was described suitable land for Chardonnay, how land form minerality in wine, the effect of exposure of the slope, climatic conditions. All of these effects varies with different areas. They also discussed how the grapes are processed. The second chapter mapped planting of Chardonnay all over the world and show what style of wine in a different area can be produced. The second part focuses on two areas, Burgundy and Champagne, which are described in more detail local terroirs. Deliberately these localities were selected because they are situated in one country. Locations are not separated by large distance and they are vastly different. After the wines have been selected from the regions concerned and an analysis of the origin of the wine. It was analyzed in picking the grapes, fermentation, maturation, filtration. In conclusion there are written the descriptions for wines from two wine critics Wine Spectator and Robert Parker, who verbally and numerically evaluate the wine. Each of these topics will vary its own terroir and different philosophy in vinification. Subregion Côte de Beune widely used in the fermentation and maturation in wooden barrels, which give wine fullness. Unlike subregion Chablis, where stainless steel tanks are used more often and wooden barrels are used less often. So the wines from this subregion are more fresh and mineral. In Cahampagne there is a combination of stainless steel tanks and wooden barrels and followed by secondary fermentation in the bottle. This wine from the Champagne has entirely different style.
