Tato diplomová práce se zabývá studiem fosforylace ovalbuminu pomocí kapilární zónové elektroforézy a hmotnostní spektrometrie. V teoretické části jsou popsány základní principy elektromigračních technik a hmotnostní spektrometrie a také struktura ovalbuminu, jeho posttranslační modifikace a význam při potravinových alergiích. This thesis deals with the study of phosphorylation of ovalbumin by capillary zone electrophoresis and mass spectrometry. The theoretical part describes the basic principles of electromigration techniques and mass spectrometry as well as the structure of ovalbumin, its posttranslational modifications and importance in food allergies.
