Abstract:

DUŠEK, Marek, Burgundská vína. [Bakalářská práce] Vysoká škola hotelová. Praha : 2014. Tato bakalářská práce je zaměřená na problematiku burgundských vín, jejich postavením na českém trhu a cenové politice dovozních společností a třech pražských restaurací Le terroir, La Degustation Boheme Bourgeiose a Alcron. Cílem této práce je zmapovat český trh z hlediska alokací a cen burgundských vín, jakož i zjistit, zda jsou v restauracích a na českém trhu vůbec prodejná. Při zpracování této práce byly v teoretické části použity převážně knižní zdroje. Tato část se zaobírá detailním rozborem Grand cru vinic v oblasti Code de Nuits. V analytické části jsou potom použita data, získané od dovozní společnosti, týkající se alokací a cen vín od nejlepších vinařů Burgundska. Nedílnou součástí jsou pak také informace o prodeji vín v restauracích od sommelierů z výše uvedených restaurací. Ve třetí závěrečné části jsou uvedena veškerá získaná data a poznatky, které byly následně shrnuty a vytvořeny z nich doporučení, jak pro dovozní společnosti a restaurace, tak i pro samotné sommeliery.

Abstract:

Abstract This Bacchelor’s dissertation is dealing with the issues of the wines from burgundy, about their place on Czech market and price strategy of one importing company and three Prague’s restaurants Le terroir, La Degustation Boheme Bourgeoise and Alcron. The main goal of this paper is to alocate the Czech market concerning the alocations from the winemakers and prices of the wines from Burgundy, a also to find out if these wines are able to be sold on Czech market. The main sources for the theory part of this dissertation were mostly books about wine. The theory part is dealing with detailed analysis of all Grand cru vineyards of the region Cote de Nuits. In analytic part i used data obtained from the importing company concerning the alocation and prices of wines from the top winemakers of Burgundy. And then i collected valuable information o about sells in restaurants from the sommeliers of the chosen restaurants. In third part the obtained data are summarized and based on them are given some recommendations for the importing company, restaurants and for the sommeliers.
