Gluten-free pasta

Abstract:

V bakalářské práci, „Bezlepkové těstoviny“, je popsán lepek, suroviny, které lepek obsahují a vliv lepku na lidský organismus, je popsána celiakie, projevy a symptomy a její diagnóza. Jsou stručně shrnuty zásady bezlepkové diety, legislativa týkající se obsahu lepku a výroba těstovin.V praktické části byly z bezlepkové mouky Jizerka s 20% přídavkem mouky ze žlutého hrachu, červené čočky a mouky cizrnové a čirokové vyrobeny na Ústavu technologie potravin Mendelovy univerzity v Brně čtyři receptury těstovin. Těstoviny byly hodnoceny v syrovém stavu, i po uvaření navrženým senzorickým dotazníkem. Nejlepší z navržených receptur byly těstoviny s přídavkem mouky z červené čočky.

Abstract:

The bachelor's thesis, "Gluten-free pasta", describes gluten, the raw materials that contain gluten and the effect of gluten on the human body, describes celiac disease, signs and symptoms and its diagnosis. The principles of a gluten-free diet, legislation on gluten content and pasta production are briefly summarized.In the practical part, four pasta recipes were made from gluten-free Jizerka flour with 20% addition of yellow pea flour, red lentils and chickpea and sorghum flour at the Institute of Food Technology of Mendel University in Brno. The pasta was evaluated in the raw state, even after cooking with a designed sensory questionnaire. The best of the proposed recipes were pasta with the addition of red lentil flour.
