The Project of Increasing the Quality of Services Provided by the Restaurant Dobré Hnízdo

Abstract:

Diplomová práce se zabývá problematikou kvality poskytovaných služeb restaurace Dobré Hnízdo. Cílem práce je analyzovat úroveň stávajících služeb restauračního zařízení a následně navrhnout projekt, který eliminuje jeho zjištěné nedostatky. Diplomová práce je rozčleněna na část teoretickou a praktickou. Teoretická část je věnována literární rešerši vztahující se k marketingu služeb, gastronomii, restauračnímu stravování, vybraným marketingovým situačním analýzám a marketingovému výzkumu. Obsahem praktické části je charakteristika restaurace Dobré Hnízdo a následná analýza stávající nabídky služeb prostřednictvím vybraných marketingových analýz a dotazníkového šetření. Na základě provedených analýz a výsledků dotazníkového šetření je v závěru zpracován projekt vedoucí ke zvýšení kvality poskytovaných služeb daného restauračního zařízení. Navržený projekt je podroben časové, nákladové a rizikové analýze.

Abstract:

This diploma thesis deals with an issue of quality of services provided by the Dobré Hnízdo restaurant. The aim of the thesis is to analyse the quality of current services of the restaurant and to propose a project, which eliminates its shortcomings. The diploma thesis is divided into theoretical and practical part. The theoretical part is devoted to a literary search related to the general definition of marketing of services, gastronomy, restaurant gastronomy, selected marketing situational analyses and marketing research. The content of the practical part is the characteristic of the Dobré Hnízdo restaurant and the subsequent analysis of the current range of services through selected marketing analyses and questionnaire survey. Based on the performed analyses and the results of the questionnaire survey, a project is proposed for increasing the quality of services provided by the Dobré Hnízdo restaurant. The proposed project is subjected to time, cost and risk analysis.
