Genetic markers of calpains and calpastatins and meat quality in different species of livestock

Abstract:

Tato bakalářská práce se zaměřuje především na kvalitu masa u různých druhů hospodář-ských zvířat a ovlivnění jeho kvality v důsledku působení endogenních proteáz kalpainů a kalpastatinů. V první kapitole bakalářské práce je literární rešerše zaměřena především na definici toho, co je to vlastně maso, dále se práce zaměřuje na strukturu masa a na složení a typy svalových vláken. V další části bakalářské práce je popsaná kvalita masa a faktory, kte-ré ovlivňují kvalitu masa. Třetí část literární rešerše se podrobně věnuje postmortálním změnám, které probíhají v mase od poražení zvířete až po zrání masa. V práci je taktéž popsána křehkost masa, která je závislá na průběhu postmortálních změn v mase. Hlavní část bakalářské práce se zabývá především popisem a stručným rozdělením genetických markerů, popisem jednonukleotidových polymorfizmů a především podrobným popisem se věnuje kalpainům a kalpastatinům, které hrají hlavní roli v procesu křehčení masa. V bakalářské práci je taktéž zpracován přehled dosud provedených asociačních studií poly-morfizmů genů CAPN a CAST u různých druhů hospodářských zvířat.

Abstract:

This bachelor thesis focuses mainly on the quality of meat in various species of livestock and influencing its quality due to the action of endogenous proteases calpains and calpasta-tins. In the first chapter of the bachelor's thesis, the literature search focuses mainly on the definition of what meat is, then the work focuses on the structure of meat and the compositi-on and types of muscle fibers. The next part of the bachelor thesis describes the quality of meat and the factors that affect the quality of meat. The third part of the literature search deals in detail with the post-mortem changes that take place in the meat from the slaughter of the animal to the maturation of the meat. The work also describes the fragility of meat, which depends on the course of postmortem changes in meat. The main part of the bachelor thesis deals mainly with the description and brief classification of genetic markers, the description of single nucleotide polymorphisms and especially the detailed description is devoted to calpains and calpastatins, which play a major role in the process of meat tende-rization. The bachelor's thesis also provides an overview of the association studies of CAPN and CAST gene polymorphisms performed in various species of livestock.
