Formation of tablets from the green microalgae Chlorella vulgaris for the usage in a food industry

Abstract:

Mikrořasa Chlorella vulgaris se díky svému unikátnímu nutričnímu složení považuje za jeden z možných budoucích alternativních zdrojů živin. Zároveň je pro obsah celé řady bioaktivních látek považována za funkční potravinu. V dnešní době je její biomasa nejčastěji konzumována v podobě doplňků stravy, převážně ve formě tablet. Praktická část této práce se zaměřuje na proces kultivace biomasy Chlorella vulgaris v laboratorních podmínkách a její následné zpracování do lyofilizovaného prášku, který je poté kompaktně tvarován do tablet. Kvalita těchto tablet byla posouzena pomocí analýzy vybraných fyzikálních vlastností. V rámci analýzy nutričního profilu byla posuzována koncentrace proteinů, pigmentů, antioxidačních látek, vitaminu B12 a vybraných prvků. Pro tyto účely byla využita škála analytických metod, například spektrofotometrické analýzy, mikrobiální metoda nebo atomová absorpční spektrometrie. Výsledky stanovení hodnot analytů v laboratorně kultivované biomase potvrdily její vyšší nutriční hodnotu ve srovnání s komerčně dostupnými doplňky stravy.

Abstract:

Thanks to its unique nutritional composition, the microalga Chlorella vulgaris is considered to be one of the possible future alternative sources of nutrients. At the same time, it is recognised as a functional food due to its content of a wide range of bioactive compounds. These days, its biomass is most commonly consumed in the form of dietary supplements, specifically in the form of tablets. The practical part of this work deals with the process of cultivation of Chlorella vulgaris biomass in laboratory conditions and its processing into lyophilized powder, which is then formed into tablets. The quality of these tablets was evaluated by analysing selected physical properties. The nutritional profile analysis included assessment of the concentration of proteins, pigments, antioxidant substances, vitamin B12 and selected elements. A range of analytical methods were used for this purpose, such as spectrophotometric analysis, microbial method or atomic absorption spectrometry. The resulting determined values of analytes in the laboratory-cultured biomass showed its higher nutritional value compared to commercially offered dietary supplement.
