The influence of vibration on the functional properties of model dairy systems

Abstract:

Cílem diplomové práce bylo vyhodnotit vliv mechanických vibrací na funkční vlastnosti modelových mléčných systémů - vzorků tvarohových sýrů s různým přídavkem hydrokoloidu pektinu. Tvarohový sýr do určité míry zastupuje výrobky typu cream cheese (CC), jejichž charakteristika, historicko-legislativní kontext a technologie byly popsány v teoretické části práce. Rovněž byla provedena rešerše problematiky vlivu vibrací, kterým jsou potraviny vystaveny během silniční a železniční přepravě a jejich deteriorativního účinku, zejména na mléčné výrobky. Praktická část zahrnovala výrobu modelových vzorků tvarohových sýrů s různým obsahem pektinu (stupeň esterifikace 68-76 %, koncentrace 0-1 % w/w). Vzorky byly chladírensky skladovány (6 ?2 °C) a následně analyzovány 2. a 30. den od výroby. Provedena byla základní fyzikálně-chemická analýza (pH, sušina, aw), analýza textury (TPA, roztíratelnost) a reologická měření. Vibrace obecně způsobovaly snížení hodnot tvrdosti a roztíratelnosti, což znamenalo nežádoucí změnu textury. Vzorky vykazovaly převažující elastický charakter, nicméně i zde se projevil negativní vliv vibrací. Ze zjištěných výsledků však bylo patrné, že obsah pektinu zásadně stabilizoval texturu vibrovaných vzorků.

Abstract:

The aim of this diploma thesis was to evaluate the influence of mechanical vibrations on the functional properties of model milk systems - curd cheese samples with different addition of pectin hydrocolloid. Curd cheese to a certain extent represents products of the CC type, whose characteristics, historical-legislative context and technology were described in the theoretical part of the thesis. Attention was also paid to hydrocolloids, which are usually used in their production. Research was also carried out on the issue of the influence of vibrations to which food is exposed during road and rail transport, and their deteriorating effect, especially on dairy products. The practical part of the work included the production of model samples of curd cheeses with different pectin content (degree of esterification 68-76 %, concentration 0-1 % w/w). The samples were stored in a refrigerator (6 ?2 °C) and subsequently analysed on the 2nd and 30th day. Basic physical-chemical analyses (pH, dry matter, aw), textural analyses (TPA, spreadability) and rheological measurements were carried out. Vibrations generally caused a decrease in hardness and spreadability values, which meant an undesirable change in texture. The samples showed a predominant elastic character, however, the negative influence of vibrations was also evident from the results found that the pectin content essentially stabilized the texture of the vibrated samples
