Effect of Foliar Sulphur Application on the Production and Quality of Malting Barley Varieties

Abstract:

V tříletém maloparcelním polním pokusu byl posouzen vliv foliární aplikace elementární S na výživný stav porostu ječmene, na výnos zrna a na vybrané kvalitativní parametry zrna a sladu. Použity byly odrůdy pro výrobu „Českého piva“ (Aksamit, Bojos a Radegast) a odrůdy pro výrobu exportního sladu (Jersey, Prestige a Sebastian). Do pokusu byly zařazeny tyto varianty hnojení: 1. S nehnojeno, 2. S aplikovaná na počátku sloupkování (BBCH 31) a 3. S aplikovaná ve fázi metání (BBCH 57). S byla aplikována ve formě suspenze mikronizované S s bentonitem (80 % S) v dávce 8 kg/ha. Výrazný vliv měl ročník, zejména suchý rok 2012. Aplikace S průkazně zvýšila obsah chlorofylu v listech (N-tester) a obsah S v rostlinách, a tím snížila poměr N:S. Přihnojení S v obou termínech průkazně zvýšilo výnos zrna, a to o 3,8 %, resp. o 6,0 %. Nejvyšší nárůst výnosu zrna po aplikací S byl zaznamenán u odrůd Bojos a Prestige. HTZ a podíl předního zrna nebyly přihnojením S významně ovlivněny. Obsah N-látek (NL) v zrnu byl ovlivněn termínem aplikace síry. Hnojení S v BBCH 31 statisticky významně zvýšilo obsah NL a naopak aplikace S až v BBCH 57 způsobila průkazný pokles obsahu NL. Pozdní aplikaci síry lze doporučit pro snížení obsahu NL v zrnu ječmene. Vyšší obsah síry v zrnu i následně sirných látek ve sladu může mít negativní vliv na senzorické vlastnosti piva. Nejvyšší obsah síry v zrnu a dimethylsufidu (DMS) a jeho prekurzorů (PDMS) ve sladu byl zjištěn u odrůd Bojos a Radegast. Ty patří do skupiny odrůd pro výrobu „Českého piva“, kde je vyšší obsah síry, resp. sirných látek žádoucí. Obsah S v zrnu a dimethylsulfidu a jeho prekurzorů ve sladu stagnoval a po aplikaci S v BBCH 57 průkazně klesl. Elementární S aplikovaná na list zlepšila výživný stav porostu ječmene, zvýšila produkci zrna a neovlivnila negativně vybrané kvalitativní parametry zrna a sladu.

Abstract:

The effect of the term of foliar elemental sulphur application on the nutritional status of six spring barley varieties, grain yield and selected qualitative parameters of grain and malt was assessed in a three-year small-plot field experiment. The varieties for the production of "Czech beer" (Aksamit, Bojos and Radegast) and varieties for the production of export malt (Jersey, Prestige and Sebastian) were used. The following fertilization variants were included in the experiment: 1. not fertilized with sulphur, 2. sulphur applied at the beginning of tillering (BBCH 31) and 3. sulphur applied in the heading stage (BBCH 57). Sulphur was applied as a suspension of micronized elemental sulphur with bentonite (up to 80% of S) at a dose of 8 kg/ha. The most significant effect proved the course of the weather especially the year 2012 without precipitation. The sulphur application significantly increased chlorophyll content in leaves (measured by N-tester) and the sulphur content of the plants and thereby the value of the N: S ratio was significantly reduced. The sulphur fertilization in both terms significantly increased grain yield by 3.8% respectively by 6.0%. The highest effect of grain yield was observed in Bojos and Prestige variety. Thousand grains weight and the proportion of the front grain were not significantly affected. The nitrogen substances (NL) content of the grain was affected by the term of the sulphur application. The sulphur fertilization in BBCH 31 statistically significantly increased the NL content and, conversely, the sulphur application in BBCH 57 caused a significant decrease in the NL content. Late sulphur application may be recommended to reduce the NL content of barley grain. Higher sulphur content in grain and subsequently sulphur in malt can prove a negative effect on the sensory properties of beer. The highest sulphur content of the grain and dimethyl sulfide (DMS) and its precursors (PDMS) was found in malt of the Bojos and Radegast varieties. These varieties belong to the group of varieties for the production of "Czech beer" in which the sulphur content is higher resp. sulphur compounds are desirable. The content of sulphur and the PDMS and DMS in malt stagnated and decreased significantly after the late application in BBCH 57. The elemental sulphur applied to the leaf improved the nutritional status of the barley vegetation, increased grain production and did not affect the selected grain and malt quality parameters.
