Possibilities of balance optimization in the Manner brewery

Abstract:

Tato bakalářská práce se zabývá postupem výroby piva a technologiemi na výrobu tohoto alkoholického nápoje jak teoreticky, tak ve vybraném pivovaru. V první části je práce zaměřena na samotné suroviny, které jsou potřebné pro výrobu piva. Déle je zde řešena samostatná výroba piva a potřebné technologie pro výrobu a vaření piva. V druhé části jsem se zabýval popisem minipivovaru Manner. Zejména druhy vyráběných piv, jaké jsou zde využívány technologie, z jakých surovin vaří a kde je nakupují. Ve třetí části jsou popsány veškeré náklady a výnosy pivovaru. Jsou zde výpočty a zjištění celkového zisku. V poslední části jsou popsány navrhované úpravy, které by bylo možné v daném pivovaru vylepšit.

Abstract:

This bachelor thesis deals with the process of beer production and technologies for the production of this alcoholic beverage both theoretically and in a selected brewery. In the first part, the work focuses on the raw materials themselves, which are needed for beer production. The separate production of beer and the necessary technologies for the production and brewing of beer is further solved here. In the second part, I dealt with the description of the Manner microbrewery. In particular, the types of beers produced, the technologies used here, the raw materials they brew, and where they buy them. The third part describes all costs and revenues of the brewery. There are calculations and findings of the total profit. The last part describes the proposed modifications that could be improved in the brewery.
