Determination of Thermal Degradation of Edible Oils Using Luminescence Spectroscopy

Abstract:

Diplomová práce se zabývá stanovením degradace jedlých olejů s využitím luminiscenční spektroskopie, jakožto moderní rychlé a jednoduché metody bez nutnosti použití chemických činidel. Teoretická část práce je orientována na charakteristiku složení jedlých olejů se zaměřením na jejich změny při tepelné zátěži, jsou zde popsány i metody pro chemické analýzy stanovení oxidace lipidů a také popis luminiscenční spektroskopie. Praktická část práce je zaměřena na naměření luminiscenčních spekter vybraných jedlých olejů a na jejich vyhodnocení v souvislosti s délkou záhřevu vzorků. Míru tepelné degradace vzorků pak dokreslují/dokumentují změny peroxidového čísla, čísla kyselosti a obsahu konjugovaných dienů, trienů, které byly zjištěny běžnými analytickými postupy.

Abstract:

This diploma thesis deals with determination of degradation of edible oils using luminescence spectroscopy as a modern, fast and simple method without the use of chemical rea-gents. The theoretical part of the thesis is oriented on characteristics of edible oils composi-tion with focus on their changes in thermal load. There are also described methods for chemical analysis of determination of lipid oxidation as well as description of luminescence spectroscopy. The practical part is focused on the measurement of luminescence spectra of edible oils and their evaluation in relation to the lenght of sample heating. The degree of thermal degradation of the samples then illustrates/documents changes in the peroxide value, acid value and content conjugate diens, triens that were determinated by conventional analytical procedures the performance of additional analyzes for verifying the degradation of selected samples of edible oils.
