The Phenomenon of Latin American Gastronomy in Prague

Anotácia:

Gastronomie je důležitou součástí lidského života a nelze ji chápat pouze jako potřebu konzumace potravin, nýbrž jako součást propojenou s kulturními, sociálními a psychologickými aspekty života. Cílem bakalářské práce je explorace postojů návštěvníků jihoamerických restaurací v Praze k jihoamerické gastronomii a explorace postojů provozovatelů jihoamerických gastronomických podniků k jejich vlastní činnosti. V zájmu naplnění cíle je práce rozdělena do tří částí. V první teoreticko-metodologické části je představena gastronomie vybraných států Jižní Ameriky a sociální pohled na gastronomii pomocí literární rešerše odborné literatury a dostupných zdrojů. V analytické části je zpracován vlastní kvalitativní výzkum použitím semistrukturovaných rozvorů s vybranými respondenty. Respondenti byli vybraní metodou sběru dat prostřednictvím referenčního výběru metodou tzv. sněhové koule. Výzkum zjišťuje pohled jihoamerické komunity na českou a jihoamerickou gastronomii, českou kulturu a průběh jejich integrace do české komunity. Dále je výzkum zaměřen na postoj českých konzumentů k jihoamerické gastronomii a jejich zkušenost z pražských restaurací specializujících se na jihoamerickou gastronomii. Analytická část prezentuje výsledky samotného výzkumu a sestavená doporučení vyplývajících ze získaných dat.

Abstract:

Gastronomy is an important part of human life and cannot be understood only as the need to consume food, but as a part connected with cultural, social and psychological aspects of life. The aim of the bachelor thesis is to explore the attitudes of visitors to Latin American restaurants in Prague to Latin American gastronomy and to explore the attitudes of operators of Latin American gastronomic companies to their own activities. In order to fulfil the goal, the work is divided into three parts. The first theoretical and methodological part presents the gastronomy of selected countries of Latin America and the social view of gastronomy using a literary search of professional literature and available resources. In the analytical part, our own qualitative research is processed using semi-structured interviews with selected respondents. Respondents were selected by the method of data collection through a reference selection using the so-called snowball method. The research examines the view of the Latin American community on Czech and Latin American gastronomy, Czech culture and the course of their integration into the Czech community. Furthermore, the research focuses on the attitude of Czech consumers to Latin American gastronomy and their experience from Prague restaurants specializing in Latin American gastronomy. The analytical part presents the results of the research itself and the recommendations made from the data obtained.
