Edible flowers and their high-risk substances

Abstract:

Tato bakalářská práce se zabývá jedlými květy a jejich rizikovými obsahovými látkami. V práci je charakterizováno deset rodů jedlých květů, jejich botanický popis, obsahové látky, způsob kultivace a použití. V literárním přehledu je charakterizována skupina jedlých květů, u kterých je popsána historie, pěstování, sběr a použití. Dále jsou popsány obsahové látky jako jsou bílkoviny, lipidy, vitamíny a rizikové obsahové látky jako například glykosidy, saponiny, terpeny, alkaloidy, flavonoidy.

Abstract:

This bachelors work deals with edible flowers and their high-risk containing substances. There is characteristic of ten families of edible flowers, their botanical description, containing substances, type of cultivation and their usage. In literary review is charakterised group of edible flowers and their history, cultivation, harvest and usage. Next, there are described containing substances gor example: proteins, lipides and vitamins; also high-risk substances as: glycosides, saponins, terpens, alkoloids and flavons.
