The Position of Cocoa in the Times of Ancient Civilizations and its Use Nowadays

Abstract:

The goal of this thesis is to introduce cacao from all possible views. It is not only a food, but also a product with a long history and a wide range of possible uses which differs according to each era since years before Columbus until today, and according to different parts of the world. In the theoretical part of this work, the cocoa tree will be introduced from a botanical point of view. It will be dedicated to its cultivation and short introduction of the best-known species of cocoa trees. Next, the thesis will focus on the history of the first civilizations that used cacao, to its discovery by the Spaniards until its extension to all of Europe. Last but not least, the use of cacao for rituals and its most important therapeutic properties will be introduced. In the practical part of this work, the perception of cacao by the inhabitants of Latin America will be looked at. This work will find out the basic information from history and the range of its uses in those days. The thesis will then introduce the most popular uses of cacao in the Czech Republic. The last chapter will deal with the best-known product made from cacao, chocolate. Some of the examples of occurrence of this snack in arts, from paintings to literature, will be discussed.

Abstract:

Cílem této práce je představit kakao ze všech možných úhlů pohledu. Nejedná se pouze o potravinu, ale o produkt s dlouhou historií a s rozsáhlými možnostmi využití, lišícími se podle různých období od dob před Kolombem až dodnes, dále pak podle výskytu v různých částech světa. V první, teoretické části práce, si přestavíme kakaovník z botanického hlediska. Budeme se věnovat jeho pěstování a krátce představíme nejznámější druhy kakaovníků. Dále se zaměříme na historii, od prvních civilizací, které kakao využívaly, přes jeho objevení Španěly, až do rozšíření po Evropě. Zmíníme také rituální využití kakaa a jeho nejdůležitější léčebné vlastnosti. Ve druhé, praktické části této práce, budeme zkoumat vnímání kakaa obyvateli Latinské Ameriky. Zjistíme základní znalosti z historie i rozsah využití v dnešní době. Dále si představíme nejoblíbenější způsoby užití kakaa také v našich krajinách. V poslední kapitole zmíníme nejznámější produkt vyrobený z kakaa, čokoládu. Vybereme několik příkladů výskytu této pochutiny v umění, od malířství až po literaturu.
