Abstract:
Tato bakalářská práce pojednává o moderních trendech ve výrobě piva. Cílem bylo vytvořit literární rešerši aplikace možných netradičních mikroorganismů, popsat výrobu bezlepkového piva pro jedince trpící celiakií a výrobu nealkoholických a nízkoalkoholických piv pomocí biologických a fyzikálních metod. This bachelor thesis deals with modern trends in beer production. The aim of the thesis was to create a literature research for the application of possible non-traditional microorganisms, to describe the production of gluten-free beer for individuals suffering celiac disease and the production of non-alcoholic and low-alcoholic beers using biological and physical methods.
