Cílem této diplomové práce bylo vypracovat literární rešerši o rostlinných olejích se zaměřením na porovnání tradičních a netradičních rostlinných olejů, jejich složení, vlastností a aplikaci v potravinářském průmyslu. The aim of this thesis was to prepare a literary review about vegetable oils with focus on comparison of traditional and non-traditional vegetable oils, their composition, properties and application in food industry.
