Benefits of meeting sustainability management indicators for restaurant profitability: examples from Vienna

Abstract:

Tato práce se snaží pokrýt mezeru ve vědeckém poznání vztahu profitability a udržitelnosti v segmentu restaurací. Hlavním cílem práce je vyhodnotit přímý vliv kritérií udržitelnosti na profitabilitu restaurací a také zjistit, jaká je motivace vlastníků pro udržitelnost. Výzkum byl prováděn kvalitativní formou, metodou polo strukturovaných rozhovorů s manažery udržitelných restaurací ve Vídni. Analýza rozhovorů byla provedená v systému Athlas.ti s použitím 41 kódů. V teoretické části jsem vycházel z existujících výzkumů zaměřených především na vliv udržitelnosti na profitabilitu organizací. Hlavní výsledky výzkumu ukazují, že restaurace, které se zabývají udržitelností, plní kritéria hlavně kvůli své vizi a orientaci vlastníků na udržitelnost. Profitabilita zde není hlavním, ale vedlejším faktorem. Dalším výstupem práce je schéma, které popisuje, jak konkrétní indikátory udržitelnosti působí na profitabilitu podniku. Tato práce může sloužit jako dobrý a systematizovaný základ pro budoucí výzkumy v oblasti managementu udržitelnosti restaurací a vztahu udržitelnosti a profitability v tomto segmentu.

Abstract:

This work aims to cover the gap in the scientific understanding of the relationship of profitability and sustainability in the restaurant segment. The main objective of the thesis is to evaluate the direct impact of sustainability criteria on the profitability of restaurants and to find out what motivates owners for sustainability. The research was conducted in a qualitative form, a semi-structured interview with managers of sustainable restaurants in Vienna. Interview analysis was performed in Athlas.ti using 41 codes. In the theoretical part, I based on existing research focused primarily on the impact of sustainability on the profitability of organizations. The main research results show that the restaurants that deal with sustainability meet the criteria mainly because of their vision and owners' orientation towards sustainability. Profitability here is not the main but secondary factor. Another output of the thesis is a scheme that describes how specific sustainability indicators affect the profitability of the enterprise. This work can serve as a good and systematized basis for future research on restaurant sustainability management and the relationship between sustainability and profitability in this segment.
