Effect of cereal fermentation on qualitative and quantitative nutritional parameters

Abstract:

Fermentace je perspektivní proces zlepšující nutriční vlastnosti krmných komodit a může být prospěšná pro výživu hospodářských zvířat. Pro účely pokusu fermentace, za použití L. plantarum, bylo vybráno 6 druhů obilovin; pšenice ozimá, pšenice dvouzrnka, pšenice červená, pšenice špalda, žito ozimé a ječmen jarní. Tyto druhy obilovin byly podrobeny analýzám na obsah vybraných makronutrientů, mikroelementů i antinutričních látek a nechaly se 48 hodin fermentovat při 37 °C v aerobním prostředí. Po fermentaci obilovin došlo k zopakování analýz a ze získaných výsledků byly vyhodnoceny relevantní závěry pro případné využití fermentovaných obilovin v praxi. Bylo zjištěno, že po fermentaci vybraných obilovin došlo k nárůstu koncentrace kyseliny mléčné, glukózy, Zn, Fe, Mn, Mg i volného P a zároveň došlo ke zvýšení koncentrace proteinů. Překvapivě však nedošlo k poklesu celkových polyfenolických látek ani kyseliny fytové, i přes to, že řada studií popsala pozitivní vliv fermentace na inhibici koncentrace těchto nežádoucích látek ve finálním substrátu.

Abstract:

Fermentation is a promising process to improve the nutritional properties of feed commodities and can be beneficial for livestock nutrition. For the fermentation experiment, using L. plantarum, 6 cereal species were selected; winter wheat, double grain wheat, red wheat, spelt, winter rye and spring barley. These cereals were analysed for the content of selected macronutrients, microelements and antinutrients and fermented at 37 °C for 48 hours in an aerobic environment. After fermentation of the cereals, the analyses were repeated and the results obtained were evaluated to draw relevant conclusions for the possible use of the fermented cereals in practice. It was found that after the fermentation of the selected cereals, the concentration of lactic acid, glucose, Zn, Fe, Mn, Mg and free P increased, while the concentration of proteins increased. Surprisingly, however, there was no decrease in total polyphenolic compounds or phytic acid, despite the fact that a number of studies have described the positive effect of fermentation in inhibiting the concentration of these undesirable substances in the final substrate.
