Determination of polyphenols in biological material and their role in immune responses

Abstract:

V této bakalářské práci bylo hlavním cílem získat přehled o výrobě červeného a bílého vína. Zjistit, co jsou to polyfenoly a flavonoidy, a které z nich jsou ve vínech obsaženy. Dále bylo cílem získat přehled o imunitním systému a vlivu alkoholu na něj. Výzkum byl prováděn na 16 vzorcích červených a bílých vín. Polyfenolické látky se stanovovaly chro-matograficky na tenké vrstvě a kolorimetrickým stanovením. Flavonoidy se stanovovaly kolorimetrickým stanovením. Koncentrace polyfenolických látek velmi záleží na mnoha faktorech v pěstování a výrobě vína. Nejvyšší koncentrace polyfenolů vyšla u španělského červeného vína. Nejvyšší kon-centrace flavonoidů byla u vína vyrobeného v Česku. Tím se prokázalo, že nemusí být vždy spojitost mezi polyfenoly a flavonoidy. Stanovení na tenké vrstvě prokázalo jednotlivé polyfenoly ve všech 16 vzorcích.

Abstract:

In this bachelor's thesis, the main goal was to get an overview of the production of red and white wine, to find out what polyphenols and flavonoids are and what are contained in wines. Furthermore, the aim was to get an overview of the immune system and find out how alcohol affects it. The research was performed on 16 samples of red and white wines. Polyphenolic substances were determined by thin layer chromatography and colorimetric determination. Flavonoids were determined by colorimetric determination. The concentration of polyphenolic substances depends very much on many factors in the cultivation and production of wine. The highest concentration of polyphenols was found in Spanish red wine. The highest concentration of flavonoids was in wine produced in the Czech Republic. This has shown that there may not always be a link between polyphenols and flavonoids. Thin layer determination showed individual polyphenols in all 16 samples.
