Response of Micro-enterprises in the Hospitality Sector to the Economic Downturn

Abstract:

Období ekonomické recese bývá pro mnoho podnikatelských subjektů obtížnou překážkou z hlediska udržení své konkurenceschopnosti. Značně zasaženým odvětvím bývá sektor pohostinství a hotelnictví, který je zatěžován vysokým tempem růstu nákladů a poklesem poptávky po službách podniků v této oblasti. Cílem této bakalářské práce je nalezení cenové politiky a šíře nabídky pro dva vybrané pohostinské podniky, s úmyslem navržení změn v obchodních modelech, za účelem udržení jejich konkurenceschopnosti a obnovy poptávky po jejich službách v období ekonomického úpadu. Toho je dosaženo prostřednictvím analýzy polostrukturovaných rozhovorů s reprezentanty stálých zákazníků a provozovateli firem, včetně provedení kalkulace nákladů s přiřazováním aktivit, na základě nákladových a procesních dat podniků. Výsledkem je navržení konkrétní šíře nabídky a cenové politiky pro vybrané produkty každého z podniků, včetně stanovení výsledných doporučení, která jsou v souladu s cílem bakalářské práce. Metodologické postupy a závěry této bakalářské práce mohou být zároveň dále využity ve vazbě na výzkumy v oblastech ziskovosti, podnikových inovačních aktivit či rodinného podnikání v pohostinském sektoru.

Abstract:

A period of economic recession tends to be a difficult obstacle for many businesses in terms of maintaining their competitiveness. The hospitality sector tends to be particularly hard hit, burdened by high cost growth rates and falling demand for the services of businesses in this area. The aim of this Bachelor's thesis is to find the pricing policy and breadth of supply for two selected hospitality enterprises, with the intention of proposing changes in business models, in order to maintain their competitiveness and restore demand for their services in a period of economic decline. This is achieved through the analysis of semi-structured interviews with representatives of regular customers and operators of the firms, including activity based costing method, based on cost and process data of the firms. As a result, a specific breadth of offer and pricing policy is proposed for the selected products of each of the companies, including the establishment of final recommendations that are in line with the aim of the Bachelor's thesis. At the same time, the methodological procedures and conclusions of this Bachelor's thesis can be further used in relation to research in the areas of profitability, corporate innovation activities or family business in the hospitality sector.
