Raising effectiveness of using raw materials for preparing foods in hotel operations

Abstract:

Cílem bakalářské práce je minimalizovat výrobní náklady hotelu Maximus Resort optimalizací vstupních surovin. Teoretická práce vychází z teorie přípravy pokrmů, z nákupního marketingu, skladového hospodářství a z kalkulace cen ve stravovacím úseku. Praktická část je zaměřena na dotazníkové šetření spokojenosti hostů s podáváním hotelových snídaní a na analýzu jejich výrobních nákladů. Na základě výsledku analýzy má práce navrhnout minimalizaci nákladů vstupních surovin a jejich skladování. Výsledkem je doporučení, jak snížit vstupní náklady při provozu hotelových snídaní včetně vhodného skladovacího systému.

Abstract:

The aim of the bachelor's thesis is to minimize the production costs of the Maximus Resort hotel by optimizing input raw materials. The theoretical work is based on the theory of food preparation, purchasing marketing, warehouse management and price calculation in the catering sector. The practical part is focused on a questionnaire survey of guests' satisfaction with serving hotel breakfasts and on the analysis of their production costs. Based on the result of the analysis, the work should propose the minimization of the costs of input raw materials and their storage. The result is a recommendation on how to reduce input costs in the operation of hotel breakfasts, including a suitable storage system.
