Abstract:
Bakalářská práce je zaměřena na koření. Teoretická část práce rozebírá základní pojmy týkající se koření, jeho historii, rozdělení a chemickou podstatu obsahových látek. Dále je charakterizováno 6 druhů koření, konkrétně česnek setý, pepřovník černý, vanilovník plocholistý, skořicovník ceylonský, paprika křovitá a kurkumovník dlouhý. Abstract:
This bachelor thesis is focused on spices. The theoretical part of this thesis is centred around basic terms related to spices, its history, division and the chemical meaning of these substances. Next, six specific spices are described. These are: garlic, black pepper, flat-leaved vanilla, Ceylon cinnamon tree, Tabasco pepper, curcuma.
