The impact of length of must contact on parameters of red wine

Abstract:

Diplomová práce se zabývá délkou macerace červeného vína a parametrům, které macerování rmutu přinese. Teoretická část popisuje strukturu hroznu, látky obsažené v semenech, maceraci, termín sklizně, antioxidanty a fenolické látky. V experimentální části proběhl pokus na výrobu červeného vína dvěma variantami, klasická metoda versus delší doba macerace. Po dobu 6 měsíců byly odebírány vzorky, které byly následně podrobeny chemické analýze. Po uplynutí 6 měsíců proběhla senzorická analýza obou variant pomocí stobodového hodnotícího systému, a navíc byl hodnocen aromatický profil vín. Výsledky byly vyhodnoceny vhodnou statistickou metodou a následně okomentovány.

Abstract:

The master thesis deals with study of lenght of maceration of red wine and it´s analytical parameters. In theoretical part a structure of grape cluster, seed´s chemical compounds, maceration, date of harvest, antioxidants and phoenolic compounds are described. In the practical part an experiment carried out: classical method of red wine production versus prolonged maceration with grape skins. Samples were taken during a 6 months period and analysed afterwards. After the 6 months, sensory analysis and aromatic profile of both variants were made. Results were statisticaly processed and discussed.
